Seared and cured Bridfish smoked salmon, celeriac salad, pea tops and lime rapeseed oil


Roasted loin and slow cooked belly of Dorset pork, butternut squash purée

and crushed potatoes

Breast of chicken, Poyntington mushroom duxelle, fondant potato, streaky bacon wrapped young carrots and fine beans

Roasted fillet of Cornish cod, mustard mash, wilted spinach and mussel cream

Potato gnocchi, cultivated mushrooms, cherry tomatoes and basil cream


Glazed lemon tart, Dorset clotted cream and raspberries

Set vanilla cream, candied pineapple, coconut tuille
